On Sunday March 28, 2010 - Papillon IX - brings forth a synergy of world famous cuisine, wine makers and a special music performance that will take place at the prestigious Raffles Hotel Singapore.The extravaganza starts off with a multi course canapé tasting menu presented by Michelin Star Demon chef Alvin Leung Jr. of Bo Innovation Hong Kong and Robert Mondavi Winery Chef Jeff Mosher. Finally an exclusive and intimate performance by renowned vocalist Mr. Chau Wakin and Band at the spectacular venue of Jubilee's Hall. The first lady of Napa Mrs. Margrit Mondavi will join us at this exquisite event in Singapore.

Jeff Mosher - Winery Chef
Jeff Mosher’s love affair with cooking began amid the flying flour and lively camaraderie of a local pizzeria in Oberlin, Ohio.
Having laid the groundwork for his culinary career in San Francisco, in 2004 Mosher moved to the Napa Valley—arguably the epicenter of American wine and food culture. His experience at Copia’s Julia’s Kitchen soon landed him the Executive Chef position where he followed the philosophy of Julia Child by creating dishes that were seasonal, fresh and innovative.
Becoming Winery Chef at Robert Mondavi Winery in January 2009 is a dream come true for Mosher, who draws inspiration from the winery’s long history of championing wine, food and art as part of a gracious, healthy lifestyle. "Being here is a perfect fit for me—I’m surrounded by people committed to great wine and to providing the best experience to our guests," he says. "Great food and great wine go hand in hand, each should complement the other with flavors in the food bringing out and enhancing characteristics of the wine, producing a beautifully balanced meal and an exceptional dining experience."
Alvin Leung Jr.
Born in London, raised in Toronto, Alvin has travelled
extensively since childhood, making him well-versed
in different cultures and cuisines. He realized early on
that modern diners wanted more than just a tasty meal
- they wanted to indulge their senses and push them to
the limit. Having visited many culinary legends such
as El Bulli, Fat Duck and Joël Robuchon’s restaurants
on a regular basis, he decided to take Chinese food in
a different direction. His unique brand of “X-treme
Chinese” has modernized Chinese cuisine by combining
centuries old recipes with modern ingredients and
cooking techniques.
In 2009, Bo Innovation became Hong Kong’s only independent restaurant to be awarded Michelin Two Stars by the prestigious Michelin guide. Alvin is also one of two self-taught chefs in charge of a professional kitchen that has ever been awarded Michelin Stars, with the other being Heston Blumenthal. http://www.boinnovation.com/

Born in Hong Kong - Emil Chau Wakin is one of the best-loved entertainers in Asia
and internationally for more than two decades.
Since 1987, he has released as many as 40 records in Mandarin, Canatonese and
English. His platinum albums such as You Make Me Happy and Sad, The Flowery Heart,
Music Brings Us Together, and Emil & Friends have brought him numerous Awards
from Taiwan, Hong Kong, Singapore and mainland China.
Alongside his singing career, Chau has appeared in a number of films
-Rumble in the Brong with Jackie Chan and has hosted numerous TV and radio shows
in Hong Kong, Taiwan and Singapore.
